Recipes: Easy Lemon Cupcakes

Ingredients:
2 T lemon juice
4 small eggs
1/2 c. sugar
1 1/2 tsp. vanilla
1/4 tsp. ginger
1/2 tsp baking powder
pinch of salt
1 c. flour, sifted
1/4 c. milk

OVEN 350F     12 cupcakes
15 minutes

Cream together eggs, sugar, lemon juice, vanilla, ginger, baking powder, and salt.
Mix in sifted flour, add in milk.
Fill cupcake liners 3/4 of the way full, and bake in oven at 350 F for 15 minutes (or until a toothpick comes out dry, when inserted to the center).

Note: Add more lemon juice to have a stronger flavor.

Recipe: Coffee Cake Bites

We LOVE coffee here and I LOVE my mini cupcake pan I got for Christmas last year so I played around and came up with Coffee Cake Bites! Hope you enjoy as well as my family did!

Ingredients:
5.5 oz instant coffee
2 eggs
1/2 c sugar
1 1/2 tsp vanilla
1 T oil
1/2 tsp baking powder
pinch of salt (I used sea salt)
1 c flour
1/4 c milk

OVEN: 350 F         PAN: Mini cupcake pan
BAKE TIME:  8 - 10 minutes (or until an inserted toothpick comes out clean)


  1. Cream together the eggs & sugar
  2. Mix in vanilla, oil, coffee, baking powder and salt.
  3. Mix in 1/4 c flour at a time. Add 1/2 the milk at a time. Start and end with the flour. (So: flour, milk, flour, milk and finally flour.)
  4. Fill greased mini cupcake pan 3/4 of the way full. Bake for 8-10 minutes.

Recipe: Banana Cupcakes

I love cupcakes and I love bananas. So, when my mom got me bananas I thought to myself I just had to find a recipe for Banana Cupcakes...but when I looked on some of my favorite food blogs I couldn't find one! I turned to Google for help but I still couldn't find one that wasn't over complicated. So, I sat down at my kitchen table and pondered up a recipe, a yummy banana cupcake recipe. When I started to gather my ingredients I had my doubts that I would just make a huge mess and I wound then have to clean up my kitchen, but to my delight this recipe gave me beautifully moist, fluffy cupcakes. This is super easy recipe that made about 20 mini cupcakes and 4 regular size cupcakes :) I topped some of these beauties with some tempered chocolate, but you can top them with whatever you'd like to. I hope you enjoy!!



Ingredients:
1 ripe Banana 
2 eggs 
1/2 c. Sugar
1 tsp. Vanilla 
1 T. Oil 
1/2 tsp. Baking Powder
a pinch of salt (about 1/8 tsp)
3/4 c. Flour
1/4 c. Milk




Oven: 350 F 
  1. Sift together flour, baking powder, and salt in a bowl.
  2. In a different bowl lightly beat eggs. 
  3. Cream sugar into the eggs.
  4. Mix vanilla, oil, and mashed banana into the sugar mixture. Mix until creamy (you make still have some banana chunks)
  5.  Add flour in thirds to the sugar, alternating with the milk. Start and end with the flour.
  6. Fill 3/4 of the cupcake liners and bake for 13-15 minutes. OR fill greased mini cupcake tin 3/4 of the way full and bake for 8-12 minutes.

Recipe: Peach Cupcakes

Have you ever looked online and through all of your cookbooks wanting to fine a recipe for an idea you have but you can't fine a recipe for it? Well that was me when my mom and I came home from the store with fresh peaches the other day. I looked through all my cookbooks wanting to find a peach cupcake recipe but it was a dead end every time, so I turned to the internet for help. But after 2 hours of website after website I couldn't find one. I found more recipes for peach cobbler then anyone could ever ask for! But I wasn't going to give up and follow the main stream and just make the run of the mill peach cobbler, no, I was set on making peach CUPCAKES and nothing else. I grabbed my flour, sugar, and peaches and i asked myself, "What needs to be in a cake? ...and lets not get too fancy" So, I grabbed my salt, baking powder, vanilla, eggs, oil, and my milk. When I looked down at all my ingredients I thought to myself, "Alright lets do this!"



Ingredients :

1 medium peach pureed (about 3/4 c)
1/2 tsp. Baking powder
1/4 tsp Salt
4 eggs
1-1/4 c. Flour
1-1/4 c Sugar
1/2 tsp. Vanilla
1 T Oil
1/4 c. Milk




Oven : 350 F

  1. Sift all dry ingredients except the sugar in a medium bowl
  2. In a different bowl cream together eggs and sugar.
  3. Mix in the peach puree.
  4. Mix in vanilla, oil, and milk.
  5. Mix flour mixture in about 1/4 cup at a time.
  6. Fill cupcake liners 3/4 of the way full and Bake at 350 F for 15-18 minutes or until an inserted toothpick comes out clean.
